Grandmothers recipes served in a 5-star hotel

Just a few months ago, in July 2019, the beautiful Villa Beluno opened its doors on the shores of Lake Nahuel Huapi, just outside of Bariloche. The heart and soul of this boutique 5-star hotel can be found in front of the stove, at the kitchen counter or in the pastry kitchen: Cristina Lopez is the woman who has made her life-long dream come true: to express her passion for gastronomy in every dish that she serves.
 
6 months ago, in the middle of the Patagonian winter, the boutique 5-star hotel Villa Beluno opened its door after a total of 6 long years of construction. The heart and soul behind this magical project is the owner Cristina Lopez. Together with her daughter Sabrina, she runs this 14-suites hotel, ideally located on the shores of Lake Nahuel Huapi at the beginning of Peninsula San Pedro, just 19 km outside of Bariloche. With the tip of Victoria Island just in front of the property, each and every window and terrace offers one of the most spectacular views that Patagonia has to offer.
 
The discovery of her passion for food and its preparation is one of the earliest memories that Cristina has. From the age of 3, she always helped her Spanish-born grandmother in the kitchen. The dishes that she used to prepare with her grandmother left everlasting impressions and still now have influence on her creations. Cristina says that it was from her grandmother that she learnt the most important detail about her cooking: “food needs to be simple and tasty, delicate, not complex, and most importantly it must leave a memory in our soul because it reminds us of our childhood.”
 
But for Cristina not only the loving and passionate preparation of the food is important. “The kitchen must start with excellent raw materials to serve superlative dishes”, she says, “Therefore, it became a necessary condition to grow our own products”. This the hotel does from day one in a huge hydroponic greenhouse, located on the grounds of the Villa Beluno.
 
Cristina’s passion for food and the ingredients can be experienced throughout the hotel: be it during the afternoon tea service in the lobby, boasting floor-to-ceiling windows, during the beautiful a la Carte breakfast or by watching her and her team during dinner service through the huge windows that give full view of the main kitchen and the patisserie.
 
For Sabrina the menu of the restaurant Avellana is a trip back in time to her childhood. “The menu is a selection of the dishes that she has been developing and serving to us since we were small, the spinach ravioli are probably the most memorable” says Sabrina, adding with a smile: “but also her desserts are excellent. Her tiramisu is an explosion of taste and flavours!”
 
Avellana is open Mondays to Sundays, from 12:00 pm to 11:00 pm
